SOLUTION

Create the following file /etc/fonts/local.conf on your web server with the following content:

<?xml version='1.0'?>
<!DOCTYPE fontconfig SYSTEM 'fonts.dtd'>
<fontconfig>
<alias>
<family>serif</family>
<prefer><family>Utopia</family></prefer>
</alias>
<alias>
<family>sans-serif</family>
<prefer><family>Utopia</family></prefer>
</alias>
<alias>
<family>monospace</family>
<prefer><family>Utopia</family></prefer>
</alias>
<alias>
<family>dialog</family>
<prefer><family>Utopia</family></prefer>
</alias>
<alias>
<family>dialoginput</family>
<prefer><family>Utopia</family></prefer>
</alias>
</fontconfig>

When you have the file in place restart your server or virtual machine. This will ensure all settings take affect within the JAVA services.
